why are they never right??? like I have a 180 with a 65 sump but also have 200 to 250 pounds of LR in the tank and a skimmer that is rated for 225g isn't enough!! why is this???

It depends on how heavy of a load you have.

A highly stocked tank will require a much bigger skimmer than a lightly stocked tank of the same size.

Yep, I see skimmer ratings as only a sales pitch. The size of a tank has really no bearing on the skimmer as much as the bioload.
