Does anyone have by a chance a list of H&S skimmers and thier air intake details?

They don't give there any information about the air intake which should be one of the most important parameters while choosing a skimmer.

In general terms:
One Eheim 1260 will yield 900-1000 liters per hour.
Real world numbers, not marketing fluff.

The air intake is also depend on the skimmer dimensions
for example both deltec AP851 & AP701 use the same pump
but
AP851 Air Intake: 900 L/H
AP701 Air Intake: 950 L/H
finally ,it isn't always recommended to adjust the skimmer to create maximum air intake.
"The AP701 produces a maximum level of air at 950L/H, but will be more efficient in most aquariums turned down to 600-650L/H using the venturi valve. This is due to turbulance in the neck of the skimmer drawing foam back into the body. On a low nutrient SPS tank however it should be possible to use all of the air as the level of foam will typically be less. Drain is standard." (http://www.deltecusa.us/proteinskimmers/ap701.php)

Actually Eheims only pull somewhere around 650LPH if I remember correctly in countries where the hz is different than the US. I never remember which is which, I think we're 60hz and other countries are 50hz - or the other way around. Here in the US the hz causes the impeller to spin faster, drawing more air. I believe most pumps designed to run in Europe have the same ~40% increase except Red Dragons, which are modified for the US market. So two BK300's would run the same here as it does in Europe but H&S and Deltecs draw much more air here. So you should check to see what hz Israel is, if the same as Europe the air draw will be less than here.
True on the height/headpressure though. I've tested Eheims on several skimmers and IIRC it was something like
H&S A200 2x1260 ~900LPH
H&S A300 3x1260 ~925LPH
H&S A200 1x1260 shorty custom ~1,000LPH
Deltec AP702 ~925LPH

There is something in yours clarifications
First it make sense that the air intake will be part of the size and final design of the skimmers. That's explain the differences between H&S 200 - 2x -1260 and the 250 - 2x -1260
As for the AP702 I belive that it was designed to operate with less air and close valve while the H&S will show their best with open valve.
As for the Hz you're completely right and the 50 Hz that we use outside of the USA causes the impeller to run slower
But we get remarkable results in every category
But still as you said - great skimmers if not the best!!!!!

Note: Keep in mind that these numbers are per pump. For example, the A250 has two Eheims and they pull a total of 1800-2000 LPH.
