Try underexposing the shots a little. All of these shots are pretty significantly overexposed, so they're coming out way too bright. Which mode are you shooting in? When I shoot, I use AV mode for corals, with the ISO as low as it goes.

Anyway, underexposing a little on purpose will help alleviate those blasted out areas, and also help the colors pop a little more.
