All crustaceans do. In fact, all Ecdysozoans do, as well.

hard to tell. if in doubt I always banish them to the sump :)

What is the easiest way to catch them? Food in a glass over night?

yes bait and a trap. or if you can remove the rock it's living in till until you are sure it's out.
