I was wondering how I calculate how much KNO3 (Saltpetre) it takes to raise the nitrate in a tank by 5ppm. Specifically how much it takes to raise 75g net water volume 5ppm.

A secondary question would be is there any other additive that you might suggest to raise nitrate, that wont add any baddies :). I was considering food grade Saltpetre because I know it will raise No3 fast, and the additional K+ may be benefical as well.

I found a calc. Hopefully this is right :)

KNO3 is about 61% NO3 by weight, and 5 ppm is about 5 mg/L or 19mg/gallon. So 38mg/gallon is probably close enough. That's a total of about 2.85 g. Let's see whether I did that math correctly... The page seems to agree.
