I am thinking of starting a system 120 gal with a sump on the side. How much lower does the sump need to be below the maintank? Also, if anyone has pictures of their systems I could use some ideas.

I would give you the big WELCOME to Reefcentral but i dont know how, however im sure some else will..
low enough to siphon down with gravity. I have a 40 gallon sump sitting in my 72 gallon stand. Try to fit your sump under your stand, it will make your set up look cleaner. I would show you a picure of mine but you really cant see my sump because my stand only has a small door. The person i bought the tank from had custom made the sump and it goes all the way across the stand.
GOOD LUCK.

three feet would give you good use of gravity
