How would this skimmer do on a moderately heavily stocked 120 w/20 gallon sump?

Yes,it should be fine ,however it's @ it's max rating ,if you are going to be feeding alot & few times a day ,maybe you want to look @ Mini 180.
Just make sure your sump has baffles to have a steady water level for the skimmer compartment.
Rule of tumb for any good insump skimmer,with strong pump.
