It was sold to me as a "finger leather" I absolutely love it!
What can anyone tell me about it?
I have read a lot on finger leathers and think that this is one, but I want some experieced thoughts and opinions.

I've most commonly seen that called a "devil's hand" leather. (Might be the same as a "finger" leather.)

Yup, Lobophytum sp., commonly called devil's hand or finger leather.
Very hardy, medium flow (preferable random-ish), medium light...looks like it will be showing polyps soon :)

what should I be doing for it?
and/or not doing...
Also, it has been very puffed up and full but today it looks a little less "full"... Any ideas?

Leathers commonly shrink up, shed, and re-inflate as part of their normal behaviour. If it collapses, I'd be concerned, but if it's just a bit smaller and the polyps are retracted for a few days, it's likely just fine. Make sure you're giving it a good amount of flow -- leathers appreciate more than many people think. It helps keep them clear of detritus and algae, so they don't have to work so hard when they shed.

Looks like a sinularia and not lobophytum.
