I am looking at getting a pair of Lamarck's Angelfish, does anyone know who might sell them, I also read some were that they change sex? So I was thinking about getting a couple small ones in the hope that they might pair, has anyone done this before?

Genicanthus genus can change sex regardless of their age or sex when you buy them. They don't pair as such though they may spawn.
In the wild the male finds a suitable partner, releases then leaves. He will then move on to another female. Due to this you won't see usual paired behaviour in an enclosed system.
They are beautiful fish but not as nice as the blackspot swallowtails (Genicanthus melanospilosor) the watanabes (Genicanthus watanabei) IMO.

Petsolutions shows that they have small and medium in stock, though they don't list whether they're male or female:

These are the most commonly available of the Genicanthus species around my way and are also the cheapest. You should ask any of your LFS if they can get them in.

I know this is sort of threadjacking, but does that mean my swallowtail will change? Or just that she has the potential to?

They all have the potential to change but it doesn't mean they will.
