Yeah my fire shrimp seems to molt about once a month or so.. maybe every other month, and when he lost a few arms (eel attack!) it took him about 3 molts to grow back. I put some iodine in the tank and this seems to help as well.

YES....IF your shrimp is molting...That is a good sign that your tank is doing good. It means that the shrimp has all the nutrients in tank that it needs & is growing. If the Shrimp are growing...thats a good thing

Be careful about dosing iodine. Normal water changes should keep the iodine at an appropriate level. That being said, molting is a GOOD think and shows you are doing much right.
