I wanted to take my sump apart and redo my baffles. How long would I be ok having it disconnected? My skimmer and heater are in my sump.

If you put the heater in the tank you could go years. Lots of folks run sumpless and skimmerless.

I do it every once and a while if I need to perform some maintenance on my sump or redo the layout like you stated.

I've had it down for a day or so, as stated above I just move the heater from the sump into the display.

You could run like this for as long as you like.

As for no skimmer, just monitor your water parameters and perform water changes if necessary. Certain types of medications require the skimmer to be shut down for like 10 days I believe.

silicone takes 24hrs to cure, I don't think you'll have any issues

One thing to consider is without the skimmer running your water will have less oxygen it might be a good idea to have a air pump and air stone on hand for if your fish start breathing hard .You can't be to cautious

Dumb question but how does a skimmer in the sump add oxygen to the tank?

A skimmer continually breaks the surface of the water allowing for 02 exchange. A powerhead pointed at the surface of the water can do the same thing. :D
