I know most reefers advocate quarantining new fish a few weeks before adding to the display tank. While I see that there are benefits to this and it allows the fish to feed and reefer to see if the fish is sick. However when the fish is introduced to a tank with other fish can't the stress of interacting with other fish still give it ick?? Also I do not have a quarantine tank set up but what i'm planning to do is use the water, sand and rocks from the display tank to set up a small makeshift tank for any new fish. If the fish does not develop any sickness and is fine after living in this temporary tank for a few weeks then he should be okay to add to the display tank??

Stress doesn't cause ich, ich is a protozoan (a tiny invert). It's a parasite, not a disease. Proper quarantine procedures of all fish, inverts, rock, coral, macroalgae, and everything else that goes into your tank will ensure that your fish never come down with it.

This page has everything you ever needed to know about ich, and then some:
