'UNK' is displayed when the AC doesn't know what to show. Using your program as an example....

When the program 1st starts the AC sets all timers to unknown, then evaluates each program line, updating the timer states when a test is true. If your tank temp is, for example 79.6 then the tests for COL will both return false because 79.6 is not > 80.0 and is not < 79.5. Sooner or later the tank temp will reach one of the test points and the UNK will go away.

In short; nothing to worry about.
