most people use kilz primer on the inside. the bright white also serves as a reflectant and makes things somewhat easier to see under there. for the outside you can use any polyurethane sealant both oil or waterbased.

I have an oak stand and has been going 6 years without any effect from saltwater. Looks the same as when I bought it. And trust me I got it wet a couple times when I started! But I did use Liquid gold on it about a week before I put it into service. Other than that it has no other finish.
Other woods may not fair as well I dunno.
I painted the inside of my pine frame, and then stained/polycoated my oak facing. I didnt use anything fancy, just a good number of coats and let it seal up real well.

I have built all my stands for my tanks so far. All have used oak with solid oak trim and pine and or whitewood inner frames. I`ll seal the outside with 1 or 2 coats of stain and then 3-4 coats of polyurethane.
Our 29g frag tank I did the inside with poly also. After 2 yrs its showing the exposure to the heat and the salt in the canopy and salt in the stand. Areas are getting dull looking and some areas are showing black spots in the wood.
The 65g, 90g and now our 210g I painted the inside with 2 coats of Kilz oil based primer and then 2-3 coats of white marine enamel on the inside. After 2 yrs it still looks like the day I did it on the 90. Salt residue and the like wipes right off with a damp rag. The canopy shows no effects from the heat and salt water mist combination.
Here is what it looks like in just the canopy of my 210g The doors are closed but they are also painted on the inside.
