I am wondering what people do to dip their newly aquired zoas. Is a freshwater dip enough? How long?

I use this dip but not fully follow the instructions...

some PALYS or zoos don't take well to dips and might just melt on you.

If I were you I would at least dip them in freshwater, even if it is only for 5 seconds or so to kill flatworms.
I think dips are a good thing, but it can stress out the zoas/palys

If you have flatworms just siphon them it is the best and safest approach.
Iodine for new zoas to get rid of pests and furan-2 for sick zoas. Although I might start using furan-2 for new zoas and frags.

I use iodine for about 10-15 min and then a 10-15 second FW dip.
