LFS got one in, looked a bit stressed but I decided to take a chance as I got it half off. Now he's in a 75 gal. At the store he was just hiding on his side under a rock breathing, he swam hard when he was caught so I figured this was just him trying to hide.

In my tank now he immediately burrowed under the sand with his head poking out. Stayed there for hours, came out once and swam around for about 30 seconds before reburrowing in the same spot and has been there for hours since. Lights off and he's sleeping there now.

Is this normal behavior for this wrasse when it's new like this or do they always spend a lot of time burrowed? Or is this something to worry about?

Yes. They can be very shy at first. He will probably be out in a couple days to a week.
