Any tips about what to do when my skimmer (Euroreef RS35) goes nuts for days after a water change? This really !@#$! me off as I find my sump full of skimmate.

how do you do your water change? Are you stirring up lots of crap? How old is the system and the skimmer?
Is your NSW source RO/DI or tap water treated w/a "gel"/aloe slime replacement dechorinator?
If the latter, dechlors like Hagen AquaPlus, BA's Tap Water Conditioner, API Stress Coat will make the skimmer foam like craaaazy.

Can you adjust the flow ? That is what we do on ours, works fine

I forgot about this but it is very true....If you are not using RO/DI you should ASAP
