I am looking into installing 2 in my return line. I'm running a Quiet One 3000. I figure I'm getting about 550gph at the tank. Which would be better 1/2" or 3/4" eductor? Thanks

Your pressure is going to be pretty low out of that pump for eductors - I'd stick with the 1/2" to get the most pressure you can. Just be ready for less-than-advertised results.

Should I look into a larger pump and sticking with the 1/2"? I had hoped to split the return again to have a total of 4 outlets.

How big is your tank, what dimensions, and where do you plan on putting them, adn what type of corals. It all makes a difference.

If you're gonna use eductors, stick with fewer outputs.

Getting a better pump might be well worth it if you haven't committed to that one yet. Eductors work off pressure, not flow - so shop for a pump with a high "max head" rating, since that's how the pressure output by aquarium pumps is typically expressed. I know 3/4" eductors like 10 PSI, which is 23 feet of head. Not sure of 1/2" eductors off the top of my head.
