I accidently left my RO/DI unit in the sun all day long. The resin in the DI chamber looks like butter...is it ruined?

I would replace the DI resin to be on the safe side. I don't think that any other portion of the unit would be affected.

I used to make my RO/DI water outside all the time. I never had any problems. I used to hook it up to the garden hose when I first got it. Then the winter came and I started making it inside. I would carry it outside and leave it out there all day long. Are you sure your DI wasn't just almost or depleted when you took it out there?

the DI seems loose now almost creamy in texture whereas before it was more solid.

I would replace the DI then.
