white shrimp as in Litopenaeus vannamei, or Penaeus setiferus?
Litopenaeus vannamei is one of the ones mass produced by commercial aquaculture. There's a ton of books around (pricey though) on it, and some free info from places like FAO (http://www.fao.org/fishery/en)

Mating isn't the issue, getting them through the larval stages is the hard part. Many farms simply buy shrimp that have made it through most of the larval stages and leave the breeding to a few outfits. They're like mysids in terms of you need to keep them sorted and well feed otherwise they'll eat each other.
