Just wondering if baked baking soda can turn back into bicarbonate by being exposed to air and moisture?

Very slowly it goes to something in between sodium carbonate and sodium bicarbonate. In general, I wouldn't worry about it aside from keeping it closed. :)

Simplified all the way:
CO2 and water reenter the solid to some extent, reversing the process that happened when you heated it to drive them off.
Is that what you meant? I would not worry about it happening in a closed container. :)
