alright, so I currently have a 125 gal sps tank and I am thinking of upgrading to a larger tank sometime in the future maybe 250 gal. I am needing a new protein skimmer and was wondering if i can get a skimmer thats too big.?
I would like to spend the money now and get one fit for a 250 gal tank

Too big? Sure! More likely it's won't be to big for the tank but just a waste of cash. 50 to 100 gallons over the total volume would be fine.

As far as getting a skimmer that is too big, it is actually often recommended that you get a skimmer that can handle many more gallons than your tank acually holds. If you have a 125 gallon then some might suggest you get a skimmer capable of skimming 200 gallons.

As far as the actual physical size of the unit, the space may be a limiting factor depending upon your setup.

Your skimmer should be matched to your bio load rather than the number of gals in your tank.

You are not going to hurt a 125 gallon sps tank by buying a skimmer rated for a 250, if you are going to upgrade your tank size in the future.
