What do you guys think would be best on a 60 cube?

It will be mostly acro's, monti's, and acan's and such.

Should I go with 2 mp10w ES or 1 mp40wES?

A single MP40w is a good pump for this size tank, or two MP10w's. The question is whether you bi-directional flow. Either would work really well.
