I will set my skimmer to how i want it to skim and it will work for about a week or two and then the water level in the skimmer raises for some reason and over flows. Any ideas of what is happening?

the return flow intoi that chamber is too much. itll cause the water within the column of the skimmer to fluctiate up and down. pull it farther from your return, or water coming into the chamber or reduce flow into that chamber

I would guess that your air venturi is getting clogged with salt creep, try sticking the end of it in the water so that it flushes the salt every few days. Only takes about 10 seconds.
