Ok So in all the years I have been in the hobby this is the first iron stand I have purchased rather than build out of wood myself, the issue is that the center of the stand has atleast an 1/8" dip, what is the best way for me to shim, or level out this problem. I have tried adjusting the stand but that isnt really working well, got some foam board but the tank just sits on it with the same gap, will the weight of the full tank cause the board to self adjust, or should i just shim the center brace of the tank and be done with it?

I would shim the tank. Couple Cedar shims and you have it made.

Why do Iron with saltwater. It will rust. Build one out of wood.

I don't think you want to shim the tank, unless it is done perfectly across every inch of the tank you will be creating a stress point. Creating a perfectly flat surface for the tank to sit on is a must, then if it isn't level you can shim the stand from the bottom.
