just like it says, what in the world are these products, why are people using them, and whats all the hype about them?

GAC= granular activated carbon. Removes dissolved organics.

GFO= granular ferric oxide. Removes phosphates mostly.

As explained above GAC will help remove some dissolved organics in your water column which skimming will not remove. Higher levels of organics in your water column can cause problems and many hobbyists believe the GAC will help this issue.
