I have a 180 with 200-300 lbs of rock in it. How much rock is too much? Can you have too much? Now that it's full of sps frags and other coral it looks like room is going to be tight. Also I have an Achilles tang naso and a scop and wasn't sure if they had the right amount of swim room.

My 2 cents
The question of too much is a matter of taste.
I think your tank looks fine.
Once the frags grow in you won't notice the rocks anymore.
Make sure you keep trimming and shaping the SPS as it grows in.
Give the SPS frags at least 4-6" of space between each other.
As far as the tangs go, they will be growing along with your corals. It will get tight in there once the frags grow in.
Plan on getting rid of them in 6 months to a year.
Good luck with your tank and enjoy watching them grow.

I'd have to agree with catman. Really a matter of preference but do think that a tank should have a minimum amount of live rock as some are just too bare. Looks good and still have room for fish to swim and plenty of places to hide;)

No problem. Its just personal preference mainly. With your tank I like the shadows you cast with some of the caves and overhangs. It gives the tank more depth. I like throwing arches in where it is open to the back wall but like I said...Its personal preference.
