I've been thinking about getting a dehumidifier for my fish room to minimize rust, mold, etc. I haven't had any problems with that yet, but I've only had my tank up and running since October.

Would that actually help make the room less humid, or would it just make my tank evaporate water faster?

I'm about to do the same. I would think it would A) make the room less humid and B) make your tank water evaporate faster and thus C) keep your tank water cooler.

A window air conditioner would be better, it would expel the heat it creates outside where a dehumidifier just dumps the heat into the same area. The lower the humidity in the air the faster the water will evaporate, i installed 2 120mm fans in my canopy and the evaporation went up about 2 to 3 gallons per day.

50-60% humidity level isnt bad and wouldnt cause mold. its best to measure it first with one of those indoor temperature monitor. they sell it for $12-15.
