I am having a problem with micro bubbles coming from my skimmer/drain section into my return section. I was thinking about putting some kind of sponge filter media in between my over/under baffles that lead into my return. Would this work?

you could use a filter sock. That would drastically decrease the amount of bubbles that are in your sump. The only con about using a sock is you need to wash it out every 3-4 days or it will become a nitrate factory.

You can put a sponge where the tank overflows into the sump, this will reduce bubbles alot.

What return pump are you using, and how much flow is going through your sump? If you have too much flow, slowing it down may help.

How much flow do you have through the sump, and how big is it? Less throughput would give more time for the bubbles to settle out. Or add another baffle if you have room. Just a couple of options that don't require a sponge/filter sock...
