Forgot to mention this really works and use it for all our commercial builds.
Here is a picture of our test LED in my tank. It then survived for over 25 hours at the last Rockford Frag Swap.
Given that the LED did succumb to salt water after being submerged for over a day we cannot say this waterproofs your LEDs but its the best insurance for all soldered builds available.

What is the coverage from one can? I've got 2 of the 18" heatsinks so would one can be sufficient for both?

One can should work for both.
When we used this on our own 24" Fixtures one can covered two 24" Heatsinks with 60 LEDs each.
