Will this 125 stand work for a 75g?

75g 48.5x18.5

125g 50x25

Would it need to be "centered" front to back or would it not really matter?

It's not a question of materials used but rather the placement of materials. It may work, but not having vertical supports in the absolute corner positioning of the tank could prove catastrophic. You need to have the corners of the tank transfering load down and through the horizontal support of the bottom frame. Not doing this puts undue stress on the upper horizontal support which over time could cause it to fail.
