I have a 55g tank drilled for a sump but its drilled at each end which is not ideal for a refu.gium.

I also have a 30g acrylic sump thats not drilled and has a refugium chamber I could use but I know its not ideal

I would say yes.... to small

If you go to the main page of this site there is a link to sump volume calculator. You plug in the dimensions of your tank & how much water will go into the sump when the power is shut off..... it will let you know how many gallons you need for when that happends.

I would think the 55g would be better.... just plug one or both holes :)

i think a 55 would be better as well you'll be filling the 30 up all the time due to evaporation i think whereas a bigger one you would be doing it less frequently.

Im not trying to be argumentative but yes a 30 will do. But bigger is always better. I have a friend with a 200 and a 100 and both hooked up to the same 40. Just remember that you will need a sump that will fit your skimmer and all of the other equipment that you will need. Just find out what you want to keep in the tank and what equipment is needed and plan your sump size accordingly. Also one size does not fit all in this hobby. In order to give the best answer we need to know what it is you want to keep.
