Is it true that you shouldn't dim new bulbs for the first 50ish hours? Any ideas behind this?

It is true. It is called a burn in time. I don't know the science behind it though.

The general recommendation is to season (burn in) fluorescent lamps before dimming. Lamp seasoning helps to stabilize the lamp properly, distribute/redeposit mercury within the lamp and burn off some impurities that can be left behind from the manufacturing process. Some manufacturers recommend at least 100 hours for optimal performance. This step is very important for lamps of lesser quality because of increased impurities. Higher quality lamps can be seasoned for less time. It is best to follow lamp manufacturers recommendations and guide lines.
