When acclimating a fish or doing a water change, what is the acceptable temperature difference?

I have found that ALL of my thermometers are have a 3' variance. how critical are we needing to be?

thanks

I wouldn't sweat 3 degrees of difference. When it comes to fish, provided that temperature differences aren't extreme, I just do a 15 min. float and dump them in. I've never lost a fish to temperature shock. Ocean temperatures can fluctuate rather widely in a short period of time. Fish are adapted to it.
