If I wanted a simple controller with a temp probe and controlled the heater and fans only, what would be the best way to go?

Reef Angel standard model. Yes, you can program it, but it comes with a pre-loaded program you can use. It is inexpensive and will control what you need.

I can get an Apex Jr. for $150 (which I'm already familiar with)

It does so much and I need so much less... I thought I would be able to find something for a lot cheaper... maybe not...
