I have had a white bubble coral for a little over a year now and it has doubled in size. It is almost covering the rock it came on. My question is, when it grows it does not produce a skeleton correct, and should I attach more rock to the on it is on now so it can expand/grow over them too.
It does produce a coral skeleton as it grows, as I believe all LPS corals do.

+1.
It will take up space, one way or the other.

Yes, flesh will grow faster then calcium carbonate skeletons. What are your calcium levels at as you may be stunting skeleton growth. A acceptable range is 420ppm - 450ppm

No need for more live rocks it will grow a skeleton of it's own. If it were zoanthid/soft corals/ acan/ blastos etc then you would need more live rocks not corals with skeleton of their own.
