Fish processor for acquiring fish eggs?

I think I would like to see if its possible to dabble in re-bottling fish eggs to use and sell them to my geographical area. I'm in Idaho and so its generally more difficult to get things like that as fresh as other states (I think). And if that doesn't work, I can use them as roe when I go fishing lol.

But to do so, I need to know how to find fish processing plants that I could contact that deal with fish like cod, polluck, etc.

Maybe a hatchery too (if they ever have extra eggs they'd want to sell).
