I have read they do this when they are getting to much light, i had a little colony like 10-15 polyp's i had kinda mid tank and they all did this within a week of adding them i moved them lower and they went to normal and doing well since.

Maybe that was just my experience but seems some zoa do better/colour up and react at different light intensities

Try moving them lower and see if it changes

Is it safe to assume Paly's will do the same? I have a few in my tank about midway up that have done that for a few weeks. Everything on the sand is great though.
