So, I had some pulsing Xenia on a small rock, but it jumped to a bigger rock that I really don't want it to overrun...what's the best way to move it without killing it? Photos attached

Just cut it off with a razor blade. Don't worry about killing it because soon enough you won't care when it starts overrunning everything.

They will grow back....trust me. I started with a little rock of maybe 20 heads....and in 8 months it's probably 3,000

Should I try to scrap from the base with a razor blade or literally just cut the trunks in half?

Just cut them off at the base. It will still grow back. Think of it like mowing your lawn.
