Are the snails healthy?
Peppermints, like most inverts, are opportunistic feeders. They'll eat anything they can.

Keeping the peppermint shrimp well fed might help with the aggression.

FWIW it seems like everytime I add a peppermint shrimp to my tank they start eating some of the smaller Stomatella snails or start picking at things I don't want them to. (various LPS corals) My LFS keeps them kind of in a sump area of this tanks & I know they're not being fed well. After about a week in my tank though they seem to settle down and act accordingly.

I kind of doubt that, but hey, anything is possible I guess. A healthy fish should have absolutely no problems whatsoever getting away from a peppermint shrimp. Also, the claws on these things are not really big enough to do any serious damage. You might want to look elsewhere IMO. GL.

A peppermint shrimp quite simply cannot kill a watchman goby. If the goby was already dead, he would gladly eat it, but they aren't physically capable of killing fish larger than fry.
Could you post a pic of your shrimp? I'm starting to think you may have something that isn't a peppermint.
