I have my RODI hooked up to a faucet with one of those bypass valves, as opposed to hard-lining it to the cold water pipe.

I accidentally turned on the hot water side and had it making RODI for about 10-15 minutes (doohhh!)

Could running hot water damage any of the filters within the canisters of the unit?

I checked the s.g. and phos after doing this and still 1.0 and 0.0, respectively, so assuming nothing to be worried about.

The hot water just eats up your filters a ton faster, but its not going to ruin your unit

Actually, the hot water has a great chance of ruining your RO membrane.

Why are you measuring the SG of the RO/DI water? Should be using an TDS meter.

Personally, I would order a new RO membrane, and just as importantly, an TDS meter.
