I chose not to mix the GFO and Carbon as the directions said too....

The GFO is tumbling and the carbon is not. Do you see any issues?

If it stays that way, you're fine. But if the GAC drops it'll prevent the GFO from tumbling, causing it to form into a brick. The other issue with doing it this way is the replacement time for the media, i.e. in my case I would get in excess of two month's out of my GFO, but would change the GAC at least once a month, as it would be so covered with bacteria in that amount of time to yield it ineffective. Ultimately you would be better served to use a separate reactor for each media, giving you the flexibility for appropriate flow, replacement time's, etc. You might even consider running the GAC in reverse flow to prevent any tumble.
