Is this stuff suitable for large overhangs and such? Is it just super glue?

Seems like super glue to me. I would use something like Marco Rocks mortar.

I spoke with the creator of Jurassic Gel. Super nice and helpful guy. He said the thick gel is designed to be applied and cure under water. For my application, which is dry reef rock to create large overhangs, he said to use the penetrant and stabilizer to prepare the surface, then use 4540. He said he used some in a marine exhibit 15 years ago and it's still holding.

I just wanted to say this stuff really works! I attached two large rocks together, and the bond is strong. Just put some glue where the rocks meet, spray it with activator and it's stable within a minute.
