How do you both acclimate and keep the temperature steady? Whenever I took the bag out my tank to drip acclimate the fish the temp started dropping.

As a general rule, you'll be better off matching the salinity of the QT to the salinity in the bag, floating for a few minutes to get the temperature to match and then letting the fish free into the QT. Drip acclimation can actually be very detrimental especially for fish tht have been in the bag for any length of time.

Thats what I read too. Temperature is far more critical than acclimation.

If you aren't using a QT, then float the bag according to the procedure in the link above. I have never used drip acclimation and have never lost a fish from acclimation failure. Salinity is the big one - temp is too, but easy to match by floating.
