I was using a long syphon tube to protect some corals from my sailfin when they had a few small scraps of food.

I noticed that when he got annoyed and attacked the syphon that he got very dark in colour, and after a few minutes went back to normal....is this usual?

Yes when fish are stressed they often change color intensity with mood

Mine used to get very dark when he was showing territorial displays.

Unless your sailfin got exposed to gamma radiation.....Then he might turn green if he gets really angry.

I don't notice it so much with my Sailfin, but my Achilles goes very pale when discomforted.

I have a rescue Desjardini that is always pale except when the light are off.
Then he is the prettiest guy in the tank.
The other tangs are always vibrant, especially the Powder Blue.
