Which is hardier? How can you tell the difference?

Florida are hardier. Yuma are more sensitive to water parameters over time. Floridas bubble patterns are more random where Yuma often radiate from the mouth in lines.

Careful if you have peppermint shrimps. Mine developed a taste for my yuma. Thankfully I caught it in time and it's slowly growing back. I don't know if it's just yumas cause it didn't touch my florida. But just keep an eye out.
