Hello:

Could I mount another pressure gage to my 5 stage unit so it is showing the pressure at the input side of the carbon and use this reading in conjunction with the normal pressure gage as a method of checking the carbon efficiency? I would like to be able at a glance know if I should change the carbon unit.

The carbon filter should not normally be the one to plug-up.
Checking the efficency of the carbon filter involves measuring the residual chlorine in the waste water stream. Whenever chlorine gets past the carbon filter is the time to change the carbon filter.
