ok i was told by a online source that the best way to do this is to cut off the whole head then split it in half then cut the halfs into little pie peices... Anybody's thoughts or opinions?

that works for larger colonies, for smaller ~3" or less just do the same but only cut the head into four pieces.

they are very tough,you can practically cube them like a ham into 20-30 pieces,including the base,or trim the outside of the heads circle,so it doesnt look mutilated in your tank,just pruned !

I have a 6" toadstool with a 8" stalk and I am thinking about cutting him. Can I cut pieces of the stalk also? How much of the cap and how much of the stalk can I cut for new shrooms? How much stalk do I need to leave alone for a new head to grow on?

actually, any little part left, over time will develop into a new coral

I've cut of a ring around the main head and then subdivided that piece into smaller frags and rubber-banded them to rubble. The mother colony has recovered fast and the other pieces sucre to the rock pretty quick as long as they have good flow and light.
