Just kind of drape it over the aquarium edge?
Is using a probe holding suction cup okay?

A suction cup is fine, the most important thing to remember is not to tie it off, crimp it, or pinch it. That will shorten the life of the probe.

I have my in the overflow chamber and it is just dangling there. The end of the probe is actually just heavy enough to keep it in place.

I would use something to gently but firmly hold it in place. Maybe a velcro strap to go around a piece of plumbing or something. What happens if the probe somehow comes out of the water. Won't it overheat the tank? Probe would read cool air temp while heater boils tank?

That is true and probably a good idea depending on your setup. My RK is directly above and to the side of my overflow, so there is no incentive for the probe to move (gravity, water flow, etc.). It is also out of the path of any movement or maintenance so I am not worried.
