is this a good choice for a canopy? i was going to go with a 1x12" piece and then put a piece of ply wood for the top

Should be OK, but do some research on sealing it to prevent the humidity from warping it.

I was going to go with spar varnish, gorrila glue on the joints, stainless steel screws, and white killz oil base on the inside

I would probebly use a latex product for the primer, due to the fact that it will bend and shift. Poplar is a soft wood and thus make sure it is really dried out befor e priming, also i might use some type of modified acrylic for the top coat. If it is too much hassle finding that then use the old oil based products. I really don't like them due to the fact that they are a natural product thus creating mold and mildew.

endgraing takes on moisture quicker that the rest of a piece of wood which can result in warping. thickly apply varnish to the endgrain and let it soak in. This will save you from moisture(humidity) issued messing up your canopy.

Poplar would be a good choice for making a canopy frame. Here in Chicago its about 15% more than pine, but well worth it. I purchase mine from a local hardwood dealer. They have a good selection, and it's straight with no knots to worry about!
